Authentic Masala Chai
Warming, spicy and sweet, this authentic chai is a cozy taste of South India and Sri Lanka and the perfect antidote for a cold January day in Canada.Ingredients:
- 1 cup water
- 1 cup whole or oat milk
- 2 teaspoons loose Assam tea
- 2-3 teaspoons sugar (to taste)
- 2 green cardamom pods, lightly crushed
- 1 small piece cinnamon (½ inch)
- Small slice fresh ginger (¼ inch), lightly smashed
Instructions:
- In a small pot, bring water to a boil with cardamom, ginger, and cinnamon/clove, then simmer for 1–2 minutes to release the flavours.
- Add the loose tea and bring it back to a boil for 30-45 seconds until the colour is a deep amber.
- Add milk and bring everything to a gentle rolling boil. Reduce heat and simmer for 2 minutes.
- Add sugar to taste, strain, and serve hot.
